Slow Cooker Chicken Marrakesh
Ingredients
2 lb chicken breast, skinned, deboned, and cut into 2-inch pieces
1 onion, sliced
14.5 oz diced tomatoes
15 oz garbanzo beans, drained and rinsed
2 carrots, peeled and diced
2 sweet potatoes, peeled and diced
1/2 tsp ground cumin
1/4 tsp ground cinnamon
1/2 tsp ground turmeric
1/2 tsp ground black pepper
1 tsp salt
1 tsp dried parsley
Preparation
- Put chicken breast pieces, onion, garbanzo beans, carrots, and sweet potatoes in a slow cooker.
- In a separate bowl, combine the ground cumin, cinnamon, turmeric, black pepper, salt, and dried parsley.
- Sprinkle over the chicken and vegetable mixture.
- Add in the diced tomatoes and mix well.
- Cover the slow cooker and set to High.
- Cook for 5 hours.
