Sweet Potatoes with Caramelized Onions
Ingredients
2 sweet potatoes
2 red bell peppers, sliced thinly
1 sweet onion, sliced thinly
1/4 cup fat-free sour cream
1 tbsp olive oil
salt and pepper to taste
Preparation
- Preheat oven to 450 degrees Fahrenheit.
- Scour and dry out the sweet potatoes.
- Pierce the sweet potatoes several times using a fork
- Put them on a baking sheet.
- Bake for 6
- Meanwhile, heat olive oil in a skillet over medium heat.
- Add in the onion and red bell peppers.
- Saute onion has become translucent.
- Decrease the heat to medium-low
- Cook the onion for 30 minutes more until it becomes very soft and dark brown in color.
- Cut the baked sweet potatoes open and put the onion mixture on top with a dash of salt, pepper, and sour cream.
